From the harvest, which is done at full ripeness and strictly hand-picked to preserve the integrity of the grapes. The grapes are destemmed, crushed, and subjected to fermentation with long maceration of the skins. This is followed by malolactic conversion and aging in French oak barriques and tonneaux. Our repertoire consists of X wines that together tell the story of the territory and our corporate philosophy, nature and its cyclicity. To these, we add a selection of high-quality extra virgin olive oil, hand-picked and cold-pressed in a mill a few kilometers from our winery.
